Most people have not heard of coconut sugar, even though it been around  for a long time. Coconut sugar also known as coco sugar, coconut palm sugar or coco sap sugar is a sugar made from the sap of cut flower buds of the coconut palm.

 Coconut sugar has been used as a traditional sweetener for thousands of years in the South and South-East Asian regions where the coconut palm is in abundant supply.  The process to make coconut sugar is quite simple. The nectar from a coconut flower is collected and then boiled down and granulated — no chemicals needed.

The sap is boiled to get rid of its water this is done over moderate heat stirring constantly.  The liquid thickens at 115°C, the thickened sap is removed from the heat.  The thick liquid will then  break down into granular form, and this coconut sugar. It is  air-dry the before packing.

Coconut sugar comes in crystal or granule form, block or liquid. It is a two-step process. which starts with  "tapping" the blossoms of a coconut tree. A cut on the spadix  is made and the sap starts to flow from the cut. The sap is then collected in  wood or bamboo containers. Which is then transferred into giant pots and placed over moderate heat to evaporate the moisture content of the sap.cocosap

Coconut sugar is sweet almost like brown sugar but with a slight caramel flovor, since organic coconut sugar is not highly processed the color, sweetness and flavor can vary depending on the coconut species used, season when it was harvested, where it was harvested and even the way the "sap" was reduced

Coconut sugar  is classified as a low glycemic index food. It is said to be healthier than  white and brown sugar.  It can be used as a sugar substitute for coffee, tea, baking, and cooking

Because of its high mineral content,and rich source of potassium, magnesium, zinc, and iron. In addition to this it contains Vitamin B1, B2, B3, and B6 compared to brown sugar, coconut sugar has 36 times the iron, four times the magnesium, and over 10 times the amount of zinc.  One minute in a blender or food processor will makes it fine enough to use in recipes like buttercream frosting. Its caramel, butterscotch flavor, which pairs well with chocolate. I     Can  also be used as a one-to-one replacement for white and brown sugar, which makes it simple to use instead.

It has a rich, caramel-like flavor that isn't too sweet. Plus, coconut sugar doesn't have that heart-palpitating affect like cane sugar does. This powdered coconut sugar recipe can be used to make icing for cookies and cakes, or used wherever powdered sugar is called for in a recipe. There is a reason why the coconut palm sugar is so nutritious. It feeds the coconut flower that grows into a wonderful coconut, from which we get such healthy products like coconut oil.  Coconut oil is unique because of its fatty acid structure. COCONUT HONEY OR SYRUP

 Boil the sap until it reaches 110°C or becomes sticky under moderate to very low heat. Cool the sticky liquid or coco honey/syrup, then pour into desired container. Store in the refrigerator for longer shelf life.   

In some areas, predominantly in Thailand, the terms "coconut sugar" and "palm sugar" are often used interchangeably. However, coconut sugar is different both in taste, texture and manufacture methods from palm sugar, which is made from the sap in the stems of the Palmyra palm, the date palm, the sugar date palm, the sago palm or the sugar palm.
